Our brigade of award-winning chefs under the direction of
Fergus Martin, Executive Chef, has introduced an exquisite range of
new menus. Drawing upon British influences with an Internatinal twist
and using the finest seasonal and local produce wherever possible,
the dishes have been designed to cater for every taste.
Noted for its culinary excellence, the kitchen brigade was recently
recognised at Europe’s largest hospitality exhibition, Hotelympia in its celebrated ‘Salon Culinaire’ awards winning six medals,
including two gold, one silver and three bronze.
Executive Chef, Fergus Martin is responsible for creating menus that are full of flavours
and aromas which utilise produce sourced from local suppliers and growers
wherever possible.
Fergus is widely recognised as being one of the UK’s leading chefs, with accolades
including semi finalist at the National Chef of the Year awards in 2004, 2006 and 2008.
He is also an international culinary judge.
Fergus draws his inspiration from contemporary
classics and creates menus bursting with
intense flavours that stimulate the palate.
Offering various dining solutions, from
light tapas-style lunch to a dinner using freshly
farmed produce, The Waterfront Brasserie is
proving to be a firm favourite for 'foodies' in the local area and further afield.
Laura is responsible for all social activities including golf, weddings,
private dining, parties and charitable events.
Wyboston Lakes is one of the very few venues in East Anglia that can cater for up to 400
people at one sitting, which makes it a huge attraction for both private parties and,
of course for weddings.
